On our way to Europe we spent a day in New York exploring the city, it’s shops and delicious restaurants. After some great recommendations, thanks to all of you, we settled on Jack’s Wife Freda for a late brunch. It was the delicious menu and Mediterranean spin on brunch that sold me, and quite possibly an Instagram photo I saw that I wanted to eat right off my phone! Guilty.
I ended up ordering the Mediterranean Breakfast with two eggs, avocado, pita bread and lebne with an arugula salad. It was light and so delicious. I also ordered their grapefruit and yogurt which made my taste-buds so happy, I knew I had to recreate the recipe at home. And share it on the blog, of course!
Essentially, it’s such a simple recipe and yet it’s so refreshing and filling. I recently served these in individual cups for brunch guests and it was a big hit! With only five ingredients, this grapefruit, yogurt cup makes for the perfect breakfast. I would suggest using higher quality ingredients- find your favorite, locally-sourced honey or perhaps make your own granola. This can be prepped for the week ahead and simply garnished before indulging. And make sure not to overlook the mint, it really is the finishing touch!
Ingredients
- Fage Greek Yogurt
- 1 ripe Grapefruit, sectioned and cut into smaller pieces
- Granola of your choice- I used honey almond this time around and it was delicious!
- Honey – I use Greek but any local honey would be excellent
- Fresh mint for garnish – thinly sliced
Instructions
- Arrange the Greek yogurt and grapefruit, topping with granola of your choice and garnishing with fresh mint and honey.
- Enjoy!
