Smoked Salmon Open-Faced Sandwich

I recently downloaded the MyFitnessPal app to help me keep track of what I eat. My mom is always asking me, did you get enough protein today? And frankly, I never bothered to sit down and calculate what I consume in a day. By no means am I counting calories, but more-so making sure I get all my nutrients and that I give my body what it needs. This app has made staying on track so much easier and adjusted the way I eat. I’ll check my nutrition progress {an easy pie graph} for the day and I’ll see I might be under my target goal for carbs or protein. It helps me plan on what I reach for to snack on, too!

Today’s post has become a new quick 5-ingredient snack of mine, yes, snack because this will only hold me over for about an hour or so. This open-faced smoked salmon sandwich is absolutely delicious, high in healthy fats and so satisfying. If you want to make this into a lunch, pair it with half an avocado with fresh-squeezed lemon and sea salt.

So, what’s on it? You guessed it, smoked salmon. I start with a European whole grain bread that comes in the perfect squares and is a bit smaller than your conventional sliced bread. Again, this works best for me but feel free to adapt the recipe to your own liking. I top it with 2% small curd cottage cheese followed by the smoked salmon.  Creme fraiche would work great here, too! I usually go with the Nova Lox brand, but there are so many great options out there for a variety of price points.

I top my sandwich with red onion slices, fresh dill for a refreshing element and fresh squeezed lemon. Freshly ground pepper for taste. Simple, right? Literally 5 ingredients with tons of nutrients and absolutely delicious. Obviously, you’ve gotta love salmon

Ingredients
  • Red onion slices
  • Cottage cheese or Creme fraiche
  • Smoked Salmon
  • Fresh Dill
  • European whole grain bread or bread of your choice
Instructions
  1. Top bread slice with cottage cheese
  2. Add smoked salmon
  3. Top with red onion, fresh dill and a squeeze of fresh lemon
  4. Freshly ground pepper to taste
  5. Serve and Enjoy!
