Breakfast is the most important meal of the day and I love a hearty breakfast that involves a little bit of everything and let’s me start off my day right. But let’s get real. When you’re running out the door, scrambling to find your keys and not miss the bus, breakfast is probably the last thing on your mind. I wanted to whip something up that I can heat up in the morning that would still give me the energy I need to start my day off right.
This quiche has spinach, onion, mushroom and cheddar cheese. It only uses two eggs which doesn’t make it too heavy {or unhealthy} but still is a balanced breakfast. While the recipe calls for a homemade crust and it is indeed, that much tastier, I used a frozen pie crust to make my life a bit simpler. Cut up a small onion and cook it in a pan of olive oil on low heat. Once the onion becomes translucent, you can add the mushrooms.
The mushrooms need to cook to a golden brown and will take approximately 20 minutes. I keep this on medium to low heat so the onions don’t burn. Once the mushrooms have browned, I add the spinach, nutmeg, pepper and a touch of salt and cook the mixture together for a few additional minutes. Once the spinach has wilted and everything has been combined, take off from heat.
Break two eggs in a different bowl and add your milk- beat completely together. Add a thin layer of shredded cheddar cheese to the bottom of your pie crust. Take your mushroom and spinach filling and add it evenly in the pie crust. Then pour your egg and milk mixture, making sure the ingredients have been completely covered. Sprinkle more cheddar cheese on top to create a bubbly crust and throw it in the oven at 400F for 35-40 minutes.
This tastes just as good warmed up the next day {or two} and makes for a no-fuss and easy breakfast! Now, there’s no excuse to not start your day off right.
- 1.5 cups of spinach
- 1/4 tsp Nutmeg
- Salt and Pepper to taste
- 2 eggs
- 2/3 cup milk
- 1 small onion
- Small package, chopped mushrooms
- 3 tbsp olive oil
- Shredded cheddar cheese
- 1 Frozen pie crust
- Preheat oven to 400F
- Add olive oil to pan and turn on medium heat.
- Chop onion and add to pan, cooking for 5-6 minutes or until translucent.
- Add mushrooms and turn on medium-low heat. Cook until golden brown- about 15-20 minutes.
- Add spinach, nutmeg, salt and pepper to taste and mix together. Allow spinach to wilt, another 2-3 minutes. Take off heat.
- In separate bowl, beat two eggs with milk.
- Add thin layer of shredded cheddar cheese to bottom of pie crust.
- Add mushroom and spinach mixture, creating an even layer on bottom of pie crust.
- Pour egg and milk mixture, making sure all ingredients are covered.
- Sprinkle with more cheddar cheese
- Bake for 35-40 minutes, or until top is golden and bubbly.
- Serve and enjoy!
