I tend to get hungry right before I head to bed. This has gotten more common since I’ve started going to yoga in the evenings. It’s easy to snack on something that has as much calories as you just burned; who feels like cooking at 9:00 pm anyway?
Last night, after yoga, I came up with a quick and easy recipe that was a big hit with the husband. Not to mention it was filling and healthy.

Ingredients
2 cups fresh spinach
2 eggs
½ cup skim small curd cottage cheese
¼ cup olive oil
Salt and pepper to taste
Crushed red pepper to taste (optional)
Water (for boiling eggs)
Directions
- Fill your pot with just enough water to cover your eggs. Add 1 tbs of olive oil and let boil. I notice that if I add olive oil to the water, the eggs are softer and easier to peel.
- Add eggs and boil for 5-6 minutes for a soft, over-easy egg.
- While waiting for the eggs to boil. Add half of your olive oil to your pan and 1 cup of spinach. Let wilt and add additional cup of spinach and remainder of olive oil. Cook down and add salt, pepper and crushed red pepper to taste.
- Place eggs in cool water and peel under running cold water.
- Place spinach in a small pile on the plate, add cottage cheese and finally place egg (cut in half) on top.
