When the air turns crisp and the leaves begin to change, I start craving more substantial food. Something a bit heavier, a tad bit greasier and what I like to consider “comfort food”. I’m not a big bread eater in general but there’s nothing like a delicious grilled cheese.
I took what I had on hand in my fridge to create an easy and filling meal for a cool day. I used kraft singles for this recipe but sharp cheddar or even brie would have hit the spot! I added fresh spinach and sauteed golden tomatoes that added a slight sweetness.
I sauteed the golden tomatoes separately. With a touch of olive oil and a bit of garlic powder, I sauteed them in the pan and covered them with aluminum foil so they would retain their juice and not dry out. After about 8 minutes, they were ready to be added to the sandwich.
I used three slices of cheese and honey wheat bread that’s fluffy and slightly sweet. I simply added two slices of cheese to one piece of bread and the final to the second piece of bread. I added a handful of fresh spinach and the sauteed tomatoes. Finally closing up the sandwich with the other piece of bread…it was time to grill!
I added a sliver of butter to the pan until it melted and put the sandwich down on medium heat. I let it cook until the bottom side of the bread was a crisp, golden-brown. I then did the same thing to the other side, adding another sliver of butter to the pan before flipping the sandwich. You want to press down with a spatula to make sure that the ingredients mix and melt at the same time.
This would be delicious with a homemade tomato soup!
- Cheese {of your choice} Good options like cheddar, brie or even Kraft singles
- Golden tomatoes {or cherry tomatoes}
- Bread
- Spinach {or arugula}
- Butter
- Garlic Powder
- Olive oil {for tomatoes}
- Saute tomatoes with garlic powder and olive oil over low heat for about 8-10 minutes.
- Arrange cheese and spinach on bread.
- Add sauteed tomatoes to sandwich and add the final slice of bread.
- Add a sliver of butter to your pan and let melt.
- Add sandwich and let brown until a golden and crisp layer has formed.
- Flip sandwich and repeat steps 4 & 5, gently pressing down on sandwich with a spatula.
- Serve!
