Chia Seed Breakfast Parfait

I first tried chia seed pudding at Beatrix and literally could not get over how good it was. Chopped mango and a meyer lemon zest couldn’t have made my mouth happier. I happen to like the texture and consistency of chia seeds, and while it’s not everyone’s cup of tea, you learn to deal when it comes to super foods. With all the amazing recipes out there, it’s hard not to enjoy the delicious options.

Lately, I’ve been putting parfaits together for the week ahead, part of my weekly meal prep, and I absolutely love how streamlined it’s made my mornings. If I forget to grab it for breakfast, it just happens to be just as good for dessert. The chia seed pudding acts as a great basis to add anything and everything to start your morning on the right foot. I add hemp seeds, fresh fruit, pear preserves, sometimes honey, sliced bananas and even shredded coconut and cacao nibs.

I’ve talked about this pear preserve before but I it’s my favorite thing. Ever. I first tried it in Serbia and couldn’t get over the taste and the natural ingredients. Plus, the name and packaging was pretty adorable, too! I was so pleasantly surprised to find it in the international grocery store that I shop at when I got back to the states. The brand, Bakina’s Tajna, or Granny’s Secret has so many amazing jams and fruit butters. Pear just happens to be my favorite and apparently more seasonal than some of the others. So when I find it, I tend to stock up. Promise you guys will get addicted, it’s so good!

Ingredients

  • 1 cup almond milk
  • 1 tsp vanilla extract
  • 1 cup plain Greek yogurt (I use Fage)
  • 1/4 cup chia seeds

     

    Instructions

    Mix all ingredients in a bowl; let stand for 30 minutes

    Cover and refrigerate overnight

    Assemble layers by first starting with the chia pudding layer, then adding fresh, sliced fruit or a jam of choice. Add second layer and top with nuts, hemp seeds or other super foods. Goji berries would be a delicious addition. Grab and go!
