Good Morning! Today I am sharing a new recipe that I’m pretty smitten over. I had pinned it a while back and knew that once the weather finally cooled down, it would be the first thing on my list. I’m always looking for delicious and hearty recipes that I can make in our crockpot- nothing beats having dinner ready when you get home from a long day at work!
This white bean chicken chili recipe will leave you satisfied and will warm you up on that chilly Fall night.
Ingredients
1.25 lbs | Boneless/skinless chicken breast, cut into cubes |
2 cups | Chicken broth |
1 | (11 oz) Can white corn, drained |
2 | (15 oz) Cans Great Northern Beans, drained |
1/2 cup | Lowfat Greek yogurt |
1 | Small white onion, chopped |
1 | (4 oz) Can green chiles, chopped |
1 | (14 oz) Can diced tomatoes.drained |
1/2 tsp | Garlic powder |
1 pkt | McCormick’s White Bean Chili Seasoning Mix |
Optional | Garnish with greek yogurt for extra creaminess |
Directions
Add all of the ingredients into the cropckpot and set on low for 8 hours. I myself prefer a thicker chili and pureed one can of the beans in the blender before I added it to the mix. You don’t need to cook the chicken before adding it to the cropckpot. Garnish with extra Greek yogurt and enjoy!
The taste was absolutely delicious and it has a small bite from the chilis. Next time, I’d like to make it a bit thicker by adding a bit more yogurt and garnishing it with some cheddar. Overall, a big hit at our house and such a healthy way to get a hearty and protein-filled meal!
