I’ve always loved Giada de Laurentiis; her recipes are light and immediately transport me back to the Mediterranean. Where I often long to be. I’ve been craving pasta for quite a while but still wanted to keep it light. Petar’s on an impromptu “diet” and well, my addiction to my Greek salads has become serious as of late.
Nevertheless, I was determined to incorporate a light and healthy pasta dish with a bottle of red for last night’s dinner; and so I visited Ms. Giada’s recipes.

The flavors were bright fresh and most importantly light. Since I’m not the biggest parsley fan, I added fresh dill instead and loved how it played with the lemon zest and lemon juice. It was a great alternative. I added some fresh Parmigiano–Reggiano to the top and dinner was ready! Check out the recipe here, to give it a try for yourself.

I don’t see snow, but I definitely don’t see Positano 😉 Put on a good movie, Under The Tuscan Sun perhaps or La Dolce Vita for a dose of Italia! Enjoy!
