Quick and Easy Oatmeal Recipe and a Kenmore Contest

Good Morning lovelies! Summer is in full swing and unless we’re firing up the grill, I would prefer to stay as far away from a stove as I can. It’s too hot! I want something light, rereshing and simple to throw together. Especially for breakfast, where I’m usually running around like a crazy person. Are you feeling me? I found this delicious (and simple) recipe on the Danish blog, The Food Club, and absolutely love how easy it is!

Since Danish is not one of my six languages, I had to online translate this bad boy…and make some of my own changes to the recipe. This cold porridge with strawberries, almonds, vanilla and dates is just plain delicious. It’s easy to throw together (you make it the night before) and kept me full through lunch! Could be a healthy treat or snack as well!

Recipe makes for two

Ingredients:

  • 1 cup oatmeal
  • 1 cup milk (I used almond but any milk would work)
  • 1/2 cup yogurt (I used FAGE greek for a thicker consistency)
  • 1 apple, grated for a nice crunch
  • 1 cup mixed berries: strawberries, blueberries and blackberries
  • 1/4 cup almonds and pistachios, roughly chopped (to your preference)
  • 1 tspn vanilla extract

Directions:

Combine oats, milk and vanilla extract in a tupperwear container. Store overnight. Chop pistachios and almonds and slice strawberries.The following morning, add yogurt, grated apple and the nut and berry mix to the oatmeal. I substituted extra berries for the dates. If the oatmeal is too thick, add extra milk. Eat at home or take on the go!

If you prefer it warm for the cooler Fall months heading our way, then simply warm it up in the morning!
