Banana Blueberry Bread

Is there anything better than the smell of freshly baked banana bread? It instantly fills your entire home, making it cozy and welcoming. Since we celebrated Easter this weekend, I wanted to bring a little something to my mom and stepdad. I had found this recipe a while back and have made it a few times, experimenting with different fruits, nuts and flours. This time, I ended up using whole wheat flour and added extra blueberries. It made the perfect not-too-sweet treat with coffee after our big lunch and doubled as a delicious breakfast in the mornings!

This version of the bread is more dense because of the whole wheat flour, but the cream cheese makes it extra moist. Did I mention there was cream cheese? It will take your banana bread to a whole other level! The recipe makes for two smaller loaves, or in my case one huge loaf! There are so many options to substitute certain ingredients, so you can make this as healthy or as decadent as you like! How perfect would these be in mini loaves as party favors? Ingredients

  • 3/4 c. butter, softened
  • 1 (8 oz.) pkg. cream cheese, softened
  • 2 c. sugar
  • 2 large eggs
  • 3 c. all-purpose flour (I used whole wheat flour- use 7/8 whole wheat flour to every 1 cup all purpose flour)
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 cups mashed bananas (about 4 medium bananas)
  • 1 cup blueberries
  • 1/2 tsp. vanilla extract

 

Instructions

  • Beat butter and cream cheese in an electric mixer until creamy on medium speed. Gradually add sugar until light and fluffy. Add eggs, one at a time, and mix until completely blended.
  • Combine flour, baking powder, baking soda and salt. Gradually add to the butter mixture beating until blended. Stir in bananas, blueberries and vanillla. Spoon batter into greased and floured loaf pan.
  • Bake at 350F for an hour or until toothpick inserted in the center comes out clean.
  • Enjoy!
